White Beans with Chanterelle Mushrooms

  • 200 grams mushrooms (such as chanterelles)
  • 2 slices unsmoked bacon
  • 1 onion (small)
  • 350 grams white beans (Santa Pau Fesols, cooked)


  1. For the aromatic oil, using a mortar and pestle, crush a bunch of parsley, 1-2 cloves garlic and mix with a little salt and extra virgin olive oil.
  2. For the beans, heat a little oil in a saucepan and sauté the mushroom and set aside.
  3. In the same pan, fry the diced bacon.
  4. When it begins to brown, add the diced onion and sauté until translucent.
  5. Add the beans and sauté.
  6. Season with salt as needed.
  7. To serve, arrange the beans in serving dish and top with mushrooms. Season with a drizzle of aromatic oil.
