Description

Sweet and light, you will have no idea you are also eating beans. Made with white beans, this coconut pie has all the flavor of coconut with all the extra protein of legumes. Delicious and nutritious, this pie is great for parties. Make your own pie crust or use a premade one.

Ingredients

  • 1 puff pastry
  • 280 grams white beans
  • 350 grams sugar
  • 80 grams flour
  • 80 grams margarine
  • 5 eggs
  • 100 grams grated coconut
  • powdered sugar (for dusting)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Roll out the dough in a pie pan and prick the base with a fork. Set aside.
  3. Drain the beans from the can, and rinse under running water. Drain again, and blend to puree.
  4. In a bowl, combine the mashed beans with all the remaining ingredients. Beat well, until the dough is completely homogeneous.
  5. Pour the dough in the base of the pie pan, sprinkle with sugar, and bake for about 35 minutes or until golden brown.
