  • 2 fresh bay leaves (large)

  • 1/2 lb. bacon (lean , or pancetta, cut into 1/4-inch dice)
  • 1 bulb fennel (trimmed and chopped)
  • 1 carrot (peeled and chopped)
  • 2 celery (ribs, with leafy tops, chopped)
  • 6 cloves garlic (chopped)
  • 2 Tbsp. thyme (chopped)
  • 3 stems rosemary (stripped and chopped)
  • 1 cup white wine
  • 1 qt. chicken stock
  • 1 chunk parmigiano-reggiano (rind)
  • 4 cups baby kale (a few fat handfuls, or baby spinach, coarsely chopped)
  • 2 slices whole wheat bread (stale, or 1 1/2 to 2 cups,, whole wheat breadcrumbs)
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 2 cloves garlic (chopped)
  • salt
  • pepper
  • 2 Tbsp. chopped parsley (each, thyme and rosemary)
  • 1/4 cup chives (minced)
  • 1/2 cup grated Parmigiano-Reggiano cheese
