The dawn of the summer months and warmer weather also means the beginning of barbecue season. This recipe for Navy Bean Salad is the perfect accompaniment to any grill out. Combining the fresh flavors of roasted red peppers, green beans, and navy beans in a light tangy sauce, this dish makes a hearty side full of robust flavor, high in protein, and low in calories. Make sure to soak the navy beans overnight in water.

Ingredients

  • 100 grams white beans
  • 1 cup green beans
  • 1/4 onion (diced)
  • 1 can fish (tuna)
  • peppers (Canned pimiento)
  • salt
  • olive oil
  • vinegar

Directions

  1. Soak the beans in water overnight.
  2. Drain the beans and place into a saucepan and cover with water. Boil for 15 minutes on high heat, lower the heat, and simmer for 25 minutes.
  3. Add salt and simmer for 5 minutes more, until tender. Set aside to cool.
  4. Place the white beans, green beans, tuna, pimiento, and onion into a bowl. Add the salt, olive oil, and vinegar. Mix well.

This recipe made a great bowl of beans and fish! I made this for a crowd for a special event at our house. It was economical and tasty and everyone enjoyed it even they did not usually like beans! We served it with savory dinner rolls.
