Description

Full of flavor and tender in texture, these Whelks in Tomato Sauce will simply steal the show at your next dinner. Simmered in a white wine tomato sauce, this whelk dish boasts a rich garlic flavor with subtle hints of coriander. The addition of capers adds a slight tang to the dish that pairs well with the natural sweetness of the tomatoes. Garnish with fresh coriander and serve with fluffy rice or a loaf of your favorite bread to dip in the extra sauce.

Ingredients

  • 500 gr. whelks
  • 1 red onion
  • 2 garlic cloves
  • 1 tomatoes (large ripe, peeled)
  • 1 tablespoon tomatoes (concentrate)
  • 1/2 bunch fresh coriander
  • 1 tablespoon garlic (flavors)
  • 2 capers
  • white wine (to taste)
  • water (to taste)
  • salt (to taste)
  • pepper (to taste)
  • mustard seeds (to taste)
  • Tabasco Pepper Sauce (to taste)

Directions

  1. Heat a tablespoon of butter in a pan, add finely chopped onion and garlic. Saute a little, and add coriander stalks, chopped tomatoes, and simmer for about 5 minutes. Then, grind the mixture in the blender, and return to pan.
  2. Add the whelks, season to taste with salt, pepper, and a few drops of Tabasco.
  3. Add the wine, and cook for about 20 minutes, stirring occasionally. Add a little water if mixture is too dry.
  4. Check the seasoning, and garnish with fresh coriander.
