Simmered in a white wine tomato sauce, this whelk dish boasts a rich garlic flavor with subtle hints of coriander. Ingredients

500 gr. whelks
1 red onion
2 garlic cloves
1 tomatoes (large ripe, peeled)
1 tablespoon tomatoes (concentrate)
1/2 bunch fresh coriander
1 tablespoon garlic (flavors)
2 capers
white wine (to taste)
water (to taste)
salt (to taste)
pepper (to taste)
mustard seeds (to taste)
Tabasco Pepper Sauce (to taste)

Directions

1Heat a tablespoon of butter in a pan, add finely chopped onion and garlic. Saute a little, and add coriander stalks, chopped tomatoes, and simmer for about 5 minutes. Then, grind the mixture in the blender, and return to pan.
2Add the whelks, season to taste with salt, pepper, and a few drops of Tabasco.
3Add the wine, and cook for about 20 minutes, stirring occasionally. Add a little water if mixture is too dry.
4Check the seasoning, and garnish with fresh coriander.
