Ingredients

  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 3 cloves garlic
  • 250 grams cremini mushrooms (sliced, may substitute button or baby bella mushrooms)
  • 1 zucchini (diced)
  • 1 tomato (diced)
  • 500 milliliters chicken broth
  • 500 milliliters water
  • 1/2 cup cracked wheat
  • salt (and pepper)
  • 1 tablespoon thyme (minced)

Directions

  1. Saute the onion and garlic in olive oil in a pan on medium heat (approximately 3 minutes). Add the mushrooms and zucchini, stir. Lower the heat and cover the pan, let cook for 5 minutes to release the juices.
  2. Add the rest of the ingredients except for the thyme in listed order.
  3. Increase the heat. Lower the heat once it reaches a boil and let cook for 10-12 minutes, uncovered, until the wheat expands.
  4. Add the thyme and cook for one more minute.
  5. Serve with whole grain bread and butter.

First time making a soup like this one, but it won't be the last. It is a nice and filling soup that is still light on the calories. I love that! Next time, I may play around with using more veggies with the mushrooms just to give it added flavor and texture, but it is still great as is.
