Cheese makes anything better — especially when it's melted under the broiler ‘til warm, brown, and bubbly, as with this classic comfort toast from the British Isles.

Ingredients

  • 1/2 cup brown ale (or other dark beer)
  • 1 cup white cheddar cheese (shredded)
  • 1 teaspoon dijon mustard
  • dashes worcestershire sauce
  • 2 slices rustic bread (hearty)
  • 2 fresh chives (chopped)
  • dashes paprika

    Directions

    1. Turn on broiler to preheat, and arrange the top rack about 4 inches from the heating element. While broiler heats up, mix beer in a small bowl with shredded cheddar cheese, mustard, and Worcestershire sauce.
    2. Place bread on a baking sheet, then spread equal amounts of cheese mixture onto bread. Put baking sheet on the top oven rack and broil, watching closely, until cheese bubbles, about 4-5 minutes.
    3. Top toasts with chives and a light sprinkle of paprika and serve immediately.
