Description
Cubes of juicy watermelon studded with luscious nectarines and a trio of sweet berries make for the most summery fruit salad. A touch of lime and a sprinkle of fresh mint give it refreshing zip. - Cut watermelon into bite-size cubes (to make 5 cups) and place in a serving bowl. Cut nectarines into wedges, then cut each wedge in half to make bite-size chunks. Add to bowl along with the blueberries and blackberries.
- Zest lime over the bowl of fruit. Squeeze half a lime over the salad. Stack some of the mint leaves at a time, cut in half, and then thinly slice crosswise (this is called a chiffonade). Gently toss salad with sliced mint and with the raspberries.
- Taste salad and add sugar or more lime juice if you like. Serve with a mint sprig or two on top.
