Description
All of our favorite refreshing flavors come together in this light summer salad. Grated cucumber, sliced radishes, watermelon, and fresh mint are tossed in a light tahini dressing with almonds for a slight crunch. A great gluten free and vegetarian option for warm weather months.

- watermelon
- radish
- fresh mint
- black sesame seeds
- almonds (soaked if possible)
- 1 tsp. tahini
- 1 lemon juice
- olive oil
- 1 garlic clove
- salt
- ground black pepper

Directions
- Grate the cucumber with a mandoline.
- Cut watermelon in squares.
- Arrange cucumber and watermelon squares on a plate. Add sliced radishes, mint, and almonds. Sprinkle with sesame seeds.
- Mix tahini, lemon juice, olive oil, garlic, salt, and pepper for tahini sauce. Pour on salad to taste.
