All of our favorite refreshing flavors come together in this light summer salad. Grated cucumber, sliced radishes, watermelon, and fresh mint are tossed in a light tahini dressing with almonds for a slight crunch. A great gluten free and vegetarian option for warm weather months.

Ingredients

  • 1 cucumber
  • watermelon
  • radishes
  • fresh mint
  • black sesame seeds
  • almonds (soaked if possible)
  • 1 teaspoon tahini
  • 1 lemon juice
  • olive oil
  • 1 garlic cloves
  • salt
  • ground black pepper

Directions

  1. 1Grate the cucumber with a mandoline.
  2. 2Cut watermelon in squares.
  3. 3Arrange cucumber and watermelon squares on a plate. Add sliced ​​radishes, mint, and almonds. Sprinkle with sesame seeds.
