All of our favorite refreshing flavors come together in this light summer salad. Grated cucumber, sliced radishes, watermelon, and fresh mint are tossed in a light tahini dressing with almonds for a slight crunch. A great gluten free and vegetarian option for warm weather months.

Ingredients

  • 1 cucumber
  • watermelon
  • radish
  • fresh mint
  • black sesame seeds
  • almonds (soaked if possible)
  • 1 teaspoon tahini
  • 1 lemon juice
  • olive oil
  • 1 garlic clove
  • salt
  • ground black pepper

Directions

  1. Grate the cucumber with a mandoline.
  2. Cut watermelon in squares.
  3. Arrange cucumber and watermelon squares on a plate. Add sliced ​​radishes, mint, and almonds. Sprinkle with sesame seeds.
  4. Mix tahini, lemon juice, olive oil, garlic, salt, and pepper for tahini sauce. Pour on salad to taste.

This recipe makes a refreshing Mediterranean salad. The cucumbers sliced in “match-sticks” gave an interesting visual appeal and contrasted the chunks of watermelon. I vary the amount of mint so that it doesn't overpower the milder flavors.
