This Spanish soup was so easy to make, and the recipe is so simple that it is also easy to remember. The basil oil gave it the perfect final touch. I ended up adding more drops as I ate the soup down. My favorite part, aside from the flavor, was that the soup did not sit heavy on my stomach. It packs a lot of flavor without the calories. It made a perfect lunch. I will make it again.
