Ingredients

  • 4 pounds watermelon (1 small, rind removed, cut into 1” pieces)
  • 1/2 cup rice vinegar (plus 2 tablespoons, unseasoned)
  • 1/4 cup toasted sesame oil
  • 1/4 cup teriyaki sauce (coconut)
  • 2 tablespoons lime juice
  • 4 tablespoons tahini
  • 1 tablespoon nectarines (coconut, or amber agave)
  • 2 tablespoons sherry vinegar (GF)
  • 2 teaspoons kosher salt (milder than table or sea salt)
  • 3 scallions (trimmed and thinly sliced)
  • sesame seeds
  • fresh cilantro (optional)
  • 2 cups coconut cream
  • 1/2 stalk lemongrass (fresh, about 6” long, cut into thirds)
  • 1 tablespoon raw sugar
  • 1 1/2 cups jasmine rice
  • 3 tablespoons avocado oil (or other high-heat oil)
  • 2 pounds fresh green beans (trimmed, washed and patted dry)
  • 3 tablespoons minced garlic
  • 4 tablespoons teriyaki sauce (coconut)
  • 3 tablespoons lime juice
  • 2 tablespoons nectarines (coconut, or agave nectar)
  • 1 tablespoon raw sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon kosher salt
