- 1 1/2 lb. seedless watermelon (a little more than 1/2 a small watermelon)
- 1/4 cantaloupe
- 1/2 cucumber (small)
- 1 tomatillo
- 1 serrano chili
- 1/2 shallot
- 2 Tbsp. tomato paste
- 2 Tbsp. red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 tsp. coarse kosher salt (plus more to taste, for gazpacho)
- 1 clove garlic
- 2 Tbsp. Tahini
- 1/4 cup tamari
- 1/4 cup water
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. rice wine vinegar
- 1/4 tsp. honey
- 2 tsp. sambal (Indonesian condiment; find in grocery store condiment aisle or Asian markets)
- 3 cups plain Greek full fat yogurt
- coarse kosher salt (to taste, for yogurt)
- togarashi (Japanese spice mix; buy in well-stocked grocery store or Asian markets; for garnish, optional)
- fresh mint leaves (for garnish, optional)
