Delicious and light on a hot summer day! Used slivered almonds instead of pine nuts, cause that’s what I had on hand and added nectarines. Easy and I will make again while watermelon is available.

This is my new go-to summer salad! I've made this twice now over the last few weeks and would make it every day if I had the ingredients on hand all the time. I did modify this slightly each time because of the lack of on hand ingredients but the results were amazing still. I used frisee' lettuce instead of the baby greens (crispier sweeter flavor than baby greens), substituted candied walnuts for the pine nuts, and when I didn't have watermelon I substituted with some farmers market peaches, nectarines or strawberries, but the best substitution was when I used a honey flavored soft goat cheese or a fresh made soft sheeps milk cheese from the farmers market instead of the feta cheese which I find too bitter and hard. The goat cheese and candied walnuts combined with the dressing with fresh mint from my garden really made this salad!
