  • 70 grams watercress (bag of, or try rocket)
  • 50 grams chopped walnuts (roughly)
  • 50 grams Parmesan (roughly chopped)
  • 1 clove garlic (crushed)
  • 1 pinch sea salt
  • 1/2 lemon
  • extra-virgin olive oil
  • 75 grams dried pasta (per portion)
  • 1 handful spinach
  • 1 handful walnuts
  • watercress leaves (Extra)
  • Parmesan (to serve)

    Directions

    1. Toast the chopped walnuts for a couple of minutes in a frying pan on a low heat. Stir occasionally to avoid burning.
    2. Add all the ingredients except the olive oil to a food processor and pulse until finely chopped and well combined. With the food processor running, slowly drizzle the oil in until the desied consistency.
    3. Cook the pasta according to pack instructions.
