Drawing from tradition, this sponge cake is light and airy. Made with olive oil and water instead of butter, this cake can be topped with any syrup or fruit with whipped cream. It also makes a great base for a trifle.

Ingredients

  • 6 eggs
  • 8 tablespoons water
  • 380 grams sugar
  • 3 tablespoons olive oil
  • 250 grams flour
  • 1 tablespoon baking powder

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a bundt cake pan with margarine and sprinkle with flour. Set aside.
  3. Separate the yolks from the whites. Whisk the egg whites until they're firm, and set aside.
  4. In another bowl, beat the egg yolks with the water.
  5. Add sugar and olive oil, and beat again.
  6. Add the flour together with the baking powder, and mix everything well.
  7. Keep adding spoonfuls of the egg whites, and stir gently from bottom to top without beating.
  8. When the mixture is homogeneous and fluffy, put it in the pan, and bake for 35 to 40 minutes.
  9. Check the cooking with a toothpick, remove from oven, and unmold.

You really can't make a cake any easier with ingredients that you just have on hand. I like the fact that there really isn't any distinct flavors involved. It makes a great base to add in any flavors you want, or use your own icing to give it a taste that you want. The taste itself turns out fluffy and not dry like other water cakes I've tried.
