Ingredients

  • 12 ounces orzo pasta
  • 1 tablespoon vegetable oil
  • 1 red onion (finely chopped)
  • 2 zucchinis (halved lengthwise, thinly sliced)
  • 1/2 pound cherry tomatoes (halved)
  • 16 ounces tuna in oil (canned, drained, flaked)
  • 2 ounces pitted kalamata olives
  • 5 ounces baby spinach (mixed, and arugula)
  • 6 ounces feta cheese (crumbled)

Directions

  1. Cook pasta according to package directions, drain and return to pan.
  2. Meanwhile, heat oil in a frying pan over medium heat. Add onion and cook, stirring, 5 mins, until soft. Add zucchini and tomatoes. Cook, stirring, 2 mins, until tender. Season.
  3. Toss zucchini mixture, tuna, olives, greens and feta with pasta. Season and serve.
