  • 3 tablespoons olive oil
  • 1 plum tomato (deseeded and chopped)
  • 4 sun-dried tomatoes in oil (drained and chopped)
  • 50 grams pitted black olives (quartered)
  • 2 spring onions (finely sliced on the diagonal)
  • 1 tablespoon capers
  • 1 tablespoon oranges (each freshly squeezed, lemon and lime juice)
  • 1 tablespoon cider vinegar
  • 2 teaspoons caster sugar
  • 2 basil leaves (large fresh torn)

    1. Heat grill to hot.
    2. Halve the avocados and discard the stones.
