Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 pears (each cut into 8 wedges)
  • 6 ounces blue cheese (soft, such as bleu d'auvergne or gorgonzola, sliced)
  • 6 ounces red cabbage (shredded)
  • 7 ounces mixed greens
  • dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard

Directions

  1. Heat butter and oil in a large frying pan. Cook pears over medium-high heat for 3-4 mins, until golden brown. Drain on paper towels then transfer to a large bowl and toss with cheese. Set aside.
  2. Add red cabbage to pan juices and cook over high heat for 2-3 mins, until beginning to soften. Add to pears along with mixed greens. Toss to combine then distribute between 4 serving plates.
  3. For the dressing, whisk together olive oil, vinegar and mustard. Drizzle over salad to serve.
