Ingredients

  • 14 ounces couscous
  • 2 cups chicken stock
  • 1 rotisserie chicken (shredded)
  • 3 ounces sun-dried tomatoes (halved)
  • 2 ounces pitted black olives
  • 3 1/2 ounces feta cheese (cut into cubes)
  • 1/3 cup sliced almonds (toasted)
  • 3 1/2 ounces mixed greens
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice

Directions

  1. Combine couscous and hot stock. Set aside for 5 mins, or until all liquid has been absorbed. Fluff with a fork. Toss with chicken, tomatoes, olives, feta and almonds.
  2. Arrange couscous mixture on serving plates along with mixed greens. Whisk together olive oil and lemon juice and drizzle over top. Serve immediately.
