Ingredients

  • 1 pound green beans (chopped)
  • 5 tablespoons olive oil
  • 1 onion (peeled and finely diced)
  • 2 cloves garlic (peeled and finely diced)
  • 1 tablespoon sugar
  • 5 tablespoons white balsamic vinegar
  • 1 lemon (zested and juiced)
  • 13 1/2 ounces cannellini beans (cans, drained and rinsed)
  • 2 1/2 cups arugula
  • 1 cup fresh dill (finely chopped)
  • 1/4 pound goat cheese (crumbled)
  • red chili flakes (to taste)

Directions

  1. Cook green beans in boiling salted water for 8 mins then drain. Meanwhile, heat oil in a frying pan and sauté onion and garlic until softened. Add sugar and cook until caramelized. Add vinegar, lemon juice and zest. Season, bring to a boil and simmer for 3 mins. Toss with remaining ingredients. Serve garnished with lemon slices.
