Ingredients

  • 9 tablespoons butter (at room temperature, chopped)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup self raising flour
  • 2/3 cup chopped walnuts
  • 1 3/4 cups Puffed Rice Cereal
  • 1/3 cup dried apricots (chopped)
  • 1/3 cup dried cranberries

Directions

  1. Preheat oven to 350°F. Lightly grease two baking trays.
  2. Using an electric mixer, beat butter and sugar together in a bowl until smooth. Add egg and beat well. With a wooden spoon, mix in the remaining ingredients until well combined.
  3. Roll tablespoonfuls of the dough into balls and place onto prepared baking trays. Flatten slightly with a floured fork.
  4. Bake for 12-15 minutes or until golden. Cool on trays.
