Ingredients

  • 1 cup flour
  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • egg (1 lg.)
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon pure vanilla

Directions

  1. Measure dry ingredients FIRST (keeps measures clean) and place in separate bowl. Baking powder may be substituted by using "self-rising" flour. Vegetable oil may be substituted by using butter.
  2. Mix together last 4 ingredients in a large bowl. Pour dry ingredients into mixture slowly while "fold stirring". Do NOT over stir or stir out small lumps!! These are OK. Waffle mix may spread on griddle better if slightly runny.
  3. Use medium-high or medium heat (never HIGH!); practice with heat. If too hot, pancakes will brown too fast and will be too firm. When they rise with bubbles, this is good!
