Description

Sultry and simple, milk-braised pork loin is an Italian classic, with aromatics come from Vin Santo, garlic and onion. Requiring just eight ingredients and about an hour and a half's time, it's an ideal Sunday supper every can enjoy. The gravy is thickened with potato starch once the roast rests. Ideally, you'll want an immersion blender to give it a puree, though a blender will work if you don't have one on hand.

Ingredients

  • 800 grams pork loin roast
  • 1 red onion (coarsely chopped)
  • 3 garlic cloves
  • 300 milliliters milk
  • salt (as needed)
  • extra-virgin olive oil
  • 5 ounces vin santo (or any sweet wine)
  • 1 tablespoon potato starch

Directions

  1. Sear the pork roast in a hot saucepan on all sides.
  2. Add the Vin Santo and allow it to evaporate completely.
  3. Add the onion, the garlic, the milk, and the salt.
  4. Allow the roast to cook covered for approximately 1 hour and 15 minutes.
  5. Remove the roast from the pan and allow it to cool wrapped in aluminum foil.
  6. Add the potato starch and a few tablespoons of Vin Santo to the sauce and cook for a few minutes.
  7. Blend the sauce with an immersion blender.
  8. Slice the roast and serve it warm covered in the sauce.
