  • sesame oil
  • 1 brown onion (large, peeled and thinly sliced)
  • 350 grams firm tofu (pack of, drained and broken into very rough chunks)
  • 6 tablespoons hoisin sauce
  • 2 tablespoons sesame seeds
  • 250 grams rice noodles (thin brown, soaked in boiling water until soft)
  • 1 handful peanuts (crushed)
  • 1 red chilli (long, finely sliced)
  • 2 limes (cut into wedges)
  • chilli sauce (to serve)
  • 3 tablespoons brown sugar
  • 1 stick lemongrass (tough outer layers removed, finely chopped)
  • 3 tablespoons reduced salt soy sauce
  • 1 tablespoon white wine vinegar
  • 1 tablespoon toasted sesame oil (plus extra to serve)
  • 2 limes
  • 2 carrots (grated or cut with a crinkle cutter)
  • 1/2 cucumber (grated or cut with a crinkle cutter)
  • 2 baby gem lettuce (finely sliced)
  • 4 spring onions (finely sliced)
  • 1 bunch mint leaves (picked)

    Fantastic. The dressing is amazing, I was hesitant to use white wine vinegar in stead of rice, but it is delicious. Didn't change anything except different noodles, no chili sauce and honey in stead of sugar.
