  • 3/4 cup superfine sugar (sifted, plus additional sugar to sprinkle on the finished cookies)
  • 2 teaspoons vanilla
  • 1 cup almonds (ground)
  • 2 cups flour (sifted)

    Directions

    1. Cream the butter using an electric mixer. Add the sugar and continue beating until it is mixed in. Add the vanilla, almonds, and half of the flour at low speed. When it is mixed in, add the rest of the flour.
    2. Place on a piece of plastic wrap, cover, and refrigerate for 30 minutes.
    3. Preheat the oven to 180 degrees Celsius.
