Description

Viennese Crescent Cookies are light, airy, flavorful cookies that are perfect for parties, celebrations and snacks. Pack a few in your lunch, or grab some for a late night snack. Ingredients include softened unsalted butter, superfine sugar, vanilla, ground almonds, and sifted flour. Make a few batches and bring some to the office to show off your talents. No matter how many you make, it won’t be enough.

Ingredients

230 grams unsalted butter (softened)
3/4 cup superfine sugar (sifted, plus additional sugar to sprinkle on the finished cookies)
2 teaspoons vanilla
1 cup almonds (ground)
2 cups flour (sifted)

Directions

1Cream the butter using an electric mixer. Add the sugar and continue beating until it is mixed in. Add the vanilla, almonds, and half of the flour at low speed. When it is mixed in, add the rest of the flour.
2Place on a piece of plastic wrap, cover, and refrigerate for 30 minutes.
3Preheat the oven to 180 degrees Celsius.
4Sprinkle flour on a cutting board. Make balls of the dough, about a spoonful in size, and shape into half moons.
5Place on baking trays and bake for 15 minutes, until the edges are slightly golden brown.
6Let the cookies cool completely and sprinkle with superfine sugar before serving.
