Ingredients

  • 170 grams lemon juice
  • 320 grams water
  • 7 grams basil leaves
  • 170 grams sugar
  • 30 grams glucose (or 60 grams sugar)

Directions

  1. Heat half of the the water to 40 degrees Celsius.
  2. Add the sugar, glucose, and basil.
  3. Add the sachet of delicacies. Mix.
  4. Heat until the mixture simmers at about 85 degrees Celsius.
  5. Remove from heat, and pour into a stainless steel bowl.
  6. Cover, and let the basil steep for 10 minutes.
  7. Sieve with a cheesecloth.
  8. Allow to cool so the mixture thickens.
  9. Prepare the lemon juice to get 170 grams of liquid.
  10. Add the juice and the remaining water to the cold mixture.
  11. Mix. I added 2 tablespoons of olive oil for more flavor.
  12. Turn on your machine by following the instructions.
