Ingredients

  • 3 eggs
  • 25 grams milk powder (skimmed)
  • 250 grams water
  • 130 grams flour
  • 70 grams cheese (grated Gruyere Comte)
  • 20 grams melted butter
  • salt

Directions

  1. Preheat oven to 210 degrees Celsius.
  2. Put popover molds in oven.
  3. Pour the milk powder in a bowl, and dilute it with water, whisking with a fork.
  4. In another bowl whisk the egg, add the milk, whisk for 2 or 3 minutes.
  5. Gradually add the flour and salt, and mix to obtain a smooth paste, then add the melted butter.
  6. Add the gruyere.
  7. Remove the molds from the oven, grease, and fill to 2/3 full.
  8. Bake for about 20 minutes (until very inflated), then for about 10 minutes at 180 C.
