Ingredients

  • 2 tablespoons i can't believe it's not butter! spread
  • 1 yellow onion
  • 2 red bell pepper, sliced
  • 1 carrots
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon dried thyme leaves, crushed
  • 1 cup brown rice (uncooked)
  • 2 1/4 cups chicken broth
  • 2 tablespoons finely chopped fresh parsley
  • 1 cup orzo pasta (uncooked, prepared according to package directions)

Directions

  1. Melt I Can't Believe It's Not Butter!® Spread in 3-quart saucepot over medium-high heat and cook onion, red peppers, carrot, salt, pepper and thyme, stirring frequently, 4 minutes or until vegetables are tender. Stir in rice and cook 3 minutes. Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 25 minutes or until rice is tender. Let stand 5 minutes. Stir in hot orzo and parsley.
