Ingredients

  • 1 tablespoon olive oil
  • 1 onion (large, diced small)
  • 1 teaspoon minced garlic
  • 3/4 teaspoon ground coriander
  • 1 teaspoon ground cumin (I used a whole teaspoon, but I love cumin)
  • 1/4 teaspoon ground fennel
  • ground black pepper (fresh, to taste)
  • 1 sweet potatoes (large or 2 medium, cut into 1/2 inch pieces)
  • 2 cans black beans (15 oz. can, rinsed and drained)
  • 4 cups vegetable stock (homemade, or use 3 cans broth and just freeze the extra)
  • salt (to taste)
  • 2 tablespoons lime juice (fresh-squeezed)
  • fat free greek yogurt (or light sour cream for serving)
  • lime wedges (to squeeze into the soup, optional)

This soup is so much yummier than you would even guess. It's very comforting, and everyone loved it.
