  • 1 1/2 cups cheese (shredded, cheddar, pepperjack, queso are all good)

  • 1 large garlic clove (crushed)
  • 1 roma tomato (seeded and chopped)
  • 1 lime (juice of)
  • 6 7/8 ounces rice (Mexican, spanish will also work)
