Directions
- Preheat the oven to 375°F. Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Place the black beans, pinto beans, kidney beans, corn, scallions, bell pepper, salsa, cumin, chili powder, oregano, garlic powder, and salt in a large mixing bowl. Mix with a rubber spatula to combine.
- Arrange half of the chips in an even layer in the prepared baking dish. Top with half of the bean mixture. Sprinkle evenly with half of the shredded pepper jack and cheddar cheeses. Repeat with remaining chips, beans, and cheeses.

Really good!! Made a few changes tho
- didn’t add the chips
-didn’t add kidney beans
- did the rest of the same, little less salsa, and just baked it in a smaller dish!
Still turned out delicious, and just dipped the chips in that!

kind of like really hearty nachos. we enjoyed them with avocado and sour cream 🙌🏻 super simple and quick to make

foray into meatless may. was great - will try next time without corn to see. after that third try will be trying to make half the amount!

I would leave the chips out and make it a dip rather than nachos overall great flavor and filling

I made this for my family of eight. Followed This recipe exactly, except for scallions which my store didn’t have so I substituted with green onions. I was surprised how delicious this recipe was. We didn’t even miss the meat! Very falvorful and filling. We’ll definitely be adding to our meatless meal rotation.

So good! I used canned tomatoes instead of salsa, added two diced jalapeños, and used frozen corn.

So yummy. My husband loved it. Doesn’t reheat very well as the chips get stale, but so delicious the day you make it.

Made it without the bell peppers on accident because I had overlooked it... still thought it was flipping delicious!!!
