Every bite of this dish includes the savory flavor of zucchini and mushrooms. Ready in only 20 minutes, this easy to make meal can be enjoyed at a dinner party or even for a quick lunch.

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 zucchini
  • 1 onion
  • 1 carrot
  • 500 grams mushrooms
  • 1 sheet puff pastry
  • 1 egg
  • tomato sauce
  • grated cheese

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Add the oil to a skillet on medium heat. Add the zucchini, onion, carrot, and mushrooms and saute for 3 to 4 minutes.
  3. Cut the puff pastry sheet in 2 rectangles 10 centimeters by 40 centimeters each. Place the puff pastry on parchment paper and pierce the center area with a fork so it does not rise. Leave a 1-centimeter border of unpierced pastry
  4. Brush the pastry with beaten egg and coat with tomato sauce.
  5. Put the vegetables in the pierced area of the puff pastry. Cover with grated cheese.
  6. Bake for about 19 minutes or until the sides are golden and have risen and the cheese has melted.

Puff pastry pizza! This dish is very good and a great way to use up any wayward veggies in the refrigerator, I always seem to have zucchini that I need to use. This is very versatile and can be changed according to individual tastes. I have never thought to use puff pastry this way so I was happy to see this recipe!
