- 1/2 cup red onion (diced)
- 1 green chile (such as jalapeno or serrano)
- 1 carrot (finely diced)
- 1/2 red bell pepper (finely diced)
- 2 tomatoes (diced)
- 2 squashes (zucchini, diced)
- 6 cups water
- 1 Tbsp. chicken bouillon (powder)
- 1 cup beans (cooked)
- 1 cup pasta (whole grain, elbows or other similar shape)

Directions
- Saute the onion, chile, and carrot together in the olive oil in a skillet on medium-high heat, stirring constantly until the onion changes in color. Add the bell pepper and cook for 2 minutes more
- Add the tomato and zucchini, the water, beans, and pasta. Cook for 10 minutes, until the pasta is tender.
