Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup red onion (diced)
  • 1 green chile (such as jalapeno or serrano)
  • 1 carrot (finely diced)
  • 1/2 red bell pepper (finely diced)
  • 2 tomatoes (diced)
  • 2 squashes (zucchini, diced)
  • 6 cups water
  • 1 tablespoon chicken bouillon (powder)
  • 1 cup beans (cooked)
  • 1 cup pasta (whole grain, elbows or other similar shape)

Directions

  1. Saute the onion, chile, and carrot together in the olive oil in a skillet on medium-high heat, stirring constantly until the onion changes in color. Add the bell pepper and cook for 2 minutes more
  2. Add the tomato and zucchini, the water, beans, and pasta. Cook for 10 minutes, until the pasta is tender.

This was a very unique recipe that I didn't have a whole lot of experience making in the past. However, it was incredibly easy to make and it tasted outstanding. Plenty of ingredients to give you a spoonful of goodness in each bit. My father in law ate it and wanted the recipe for his wife so he could enjoy it more often. I will be making this 4 star recipe again shortly.
