Description

This rabbit and bean soup makes for a filling and hearty meal. The combination of the meat, vegetables, and beans provides a ton a protein which will help you stay full. The soup comes together in a little over an hour, so it is a perfect recipe to make on the weekend. Make this on a Sunday and you can enjoy it for easy lunches and dinners throughout the week.

Ingredients

  • 400 grams white beans (large)
  • 1 whole rabbit (separated into pieces)
  • salt
  • ground black pepper
  • 1 carrots (cubed)
  • 1 leeks (cubed)
  • 1 onions (cubed)
  • 1 red bell pepper (cubed)
  • 1 green bell pepper (cubed)
  • 1/2 zucchini (cubed)
  • 1 garlic cloves (diced)
  • 1 bay leaf
  • 1 liter chicken stock (or vegetable stock)
  • thyme
  • rosemary

Directions

  1. 1The night before, soak the white beans in cold water for 12 hours.
  2. 2Drain the beans and cook them in a pressure cooker for 20 minutes with salted fresh water.
  3. 3Salt and pepper the rabbit to taste. Sear it on all sides in a Dutch oven with olive oil until golden. Set aside.
  4. 4In the same Dutch oven, saute the carrot, leek, onion, bell peppers, zucchini, and garlic.
  5. 5Once the vegetables are softened, add the rabbit, beans, bay leaf, chicken/vegetable stock, and some thyme and rosemary.
  6. 6Simmer 30 minutes on low heat.
