Ingredients

  • 2 carrots (chopped)
  • 2 stalks celery (chopped)
  • 4 cups vegetable stock
  • 3 1/2 ounces pearl barley
  • 2 tablespoons fresh parsley (chopped)

Directions

  1. Lightly coat a large pot with oil. Sauté carrots and celery for 4-5 mins, until tender. Add stock and barley. Bring to a boil, reduce heat and simmer, covered, for 40-45 mins, until barley is tender. Season to taste. Add parsley and serve.

Great except I chopped veggies a little finer than I wanted. Will do better next time. But still as good as it smells. :) thank you.

so nice. this is a soup that is the closest to the veg soup back in northern ireland. i added seasoning as it wouldve been really bland otherwise. thank you for sharing

Tasty and filling. Good light soup. Would make it again. Could do with some more flavor though I guess.
