  • 1 cup snow peas (ends trimmed)
  • 5 ounces enoki mushrooms (root end trimmed, you can also use sliced shitake)
  • 1 cup fresh spinach
  • 2 ounces udon noodles (frozen)
  • 4 green onions (sliced on a diagonal)
  • Sriracha (to serve, optional)
