Ingredients

  • 4 flour tortillas
  • 1 cup hummus
  • 3 1/2 ounces mixed greens
  • 1 carrot (grated)
  • 1/2 green pepper (deseeded, cut into thin strips)
  • 2 tomatoes (diced)
  • 3 1/2 ounces ricotta cheese
  • 1/4 cup chopped fresh chives (finely)
  • 2 stalks celery (cut into 4 inch pieces)

Directions

  1. Place tortillas on a flat work surface. Spread hummus over top. Add mixed greens, carrot, pepper and tomatoes. Roll up tightly to enclose filling. Halve.
  2. In a small bowl, mix ricotta with chives. Spread down the center of each piece of celery. Serve with tortilla wraps.
