  • 100 grams rice
  • rice wine vinegar
  • salt
  • 200 grams spinach leaves
  • hot sauce
  • 1 carrot (peeled and julienned)
  • 1 zucchini (julienned)
  • ground black pepper

    Directions

    1. Rinse the rice well to remove all its starch. Place the rice in a colander and rinse repeatedly with cold water. Cook as normal and let cool 10 minutes.
    2. Once cool, add a splash of vinegar and a pinch of salt to taste, and set aside.
    3. Boil the spinach in hot water for 30 seconds. Do this in batches. Once cooked, shock the spinach in a ice bath.
