Description

Don't be put off by the "stew" in the recipe title. This is one stew that takes only minutes to prepare, thanks to quick-cooking vegetables-- green beans, peas, cardoons, and mushrooms--and shrimp. You'll want to blanch the beans and peas before using, but this is quick work and you can even do that in advance. If you can't find cardoons at your local greenmarket, farmstand, or supermarket, just substitute celery.

Ingredients

  • 8 ounces green beans (cooked)
  • 8 ounces green peas (cooked)
  • 1 tablespoon vegetable oil
  • 280 grams cardoons (or celery)
  • 100 grams mushrooms (cleaned and sliced)
  • vegetable broth
  • 250 grams shrimp (peeled and deveined)

Directions

  1. 1Add the oil to a skillet on medium heat. Add the cardoons or celery and saute for 5 minutes.
  2. 2Add the mushrooms and cook for a few minutes. Add the green beans and peas and mix well.
  3. 3Add the vegetable broth and bring to a simmer.
  4. 4Add the shrimp, cook for a few minutes, and serve.
