Don't be put off by the "stew" in the recipe title. This is one stew that takes only minutes to prepare, thanks to quick-cooking vegetables-- green beans, peas, cardoons, and mushrooms--and shrimp. You'll want to blanch the beans and peas before using, but this is quick work and you can even do that in advance. If you can't find cardoons at your local greenmarket, farmstand, or supermarket, just substitute celery.

Ingredients

  • 8 ounces green beans (cooked)
  • 8 ounces green peas (cooked)
  • 1 tablespoon vegetable oil
  • 280 grams cardoons (or celery)
  • 100 grams mushrooms (cleaned and sliced)
  • vegetable broth
  • 250 grams shrimp (peeled and deveined)

Directions

  1. Add the oil to a skillet on medium heat. Add the cardoons or celery and saute for 5 minutes.
  2. Add the mushrooms and cook for a few minutes. Add the green beans and peas and mix well.
  3. Add the vegetable broth and bring to a simmer.
  4. Add the shrimp, cook for a few minutes, and serve.

This hearty vegetable stew with shrimp is one of the most tempting recipes I have ever found. It was well seasoned and the shrimp went really well with the vegetables. Every spoonful of this stew was steaming with chunks of goodness. A 5 star recipe I plan to make again next weekend.
