Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion (peeled and diced)
  • 2 stalks celery (trimmed and diced)
  • 2 carrots (peeled and chopped)
  • 1 garlic clove (peeled and minced)
  • 1 tablespoon herbs (Provencal)
  • 28 ounces peeled tomatoes
  • 3 cups water
  • salt
  • ground black pepper

Directions

  1. Place a large pot on the stove at low heat. Add the oil, onion, celery, carrot, and garlic. Mix everything well and cook until the onion becomes transparent, about 5 minutes.
  2. Add the herbs and cook for another minute.
  3. Add the tomatoes into the pot. Mash them using a wooden spoon. Add the water and a pinch each of salt and black pepper and mix well.
  4. Cover the pot and let it simmer for 10 minutes. Serve warm.

This soup is delicious and easy to make. It could probably be simmered in a slow cooker so it is ready when you get home from work. We always eat a lot of this during winter with some grilled cheese sandwiches.
