Ingredients

- 1 tablespoon olive oil
- 1/2 onion (peeled and diced)
- 2 stalks celery (trimmed and diced)
- 2 carrots (peeled and chopped)
- 1 garlic clove (peeled and minced)
- 1 tablespoon herbs (Provencal)
- 28 ounces peeled tomatoes
- 3 cups water
- salt
- ground black pepper
Directions
- Place a large pot on the stove at low heat. Add the oil, onion, celery, carrot, and garlic. Mix everything well and cook until the onion becomes transparent, about 5 minutes.
- Add the herbs and cook for another minute.
- Add the tomatoes into the pot. Mash them using a wooden spoon. Add the water and a pinch each of salt and black pepper and mix well.
- Cover the pot and let it simmer for 10 minutes. Serve warm.

This soup is delicious and easy to make. It could probably be simmered in a slow cooker so it is ready when you get home from work. We always eat a lot of this during winter with some grilled cheese sandwiches.
