Description
This simple salad requires no cooking and comes together easily. Fresh corn, beans, tomatoes, and onions are dressed in a simple viniagrette made from balsamic vinegar, olive oil, and spices including garlic, chile flakes, and mustard. Once the vegetables are mixed with the dress the whole thing is spinkled with sesame seeds for a bit of nutty crunch. Allowing the salad to rest for an hour before serving give the vegetables time to absorb the bold flavors of the dressing.

- 250 grams corn kernels (fresh)
- 1/2 cup beans (cooked)
- 1 tomato (medium, diced)
- 2 Tbsp. onion (finely diced)
- 1 Tbsp. balsamic vinegar
- 1/2 Tbsp. olive oil
- 1 clove garlic (minced)
- salt and ground black pepper
- 1/2 tsp. chile flakes (may substitute cayenne)
- 1/4 tsp. ground mustard
- 1 Tbsp. sesame seeds (toasted)

Directions
- Place the beans, tomato, and onion into a bowl.
- Whisk together the vinegar, olive oil, garlic, salt, pepper, chile, and mustard together in a separate bowl. Add to the beans.
- Sprinkle with the sesame seeds and mix together to coat evenly.
- Set aside for 1 hour at room temperature before serving.
