  • 2 cups water
  • 14.5 ounces diced tomatoes (undrained)
  • 1 package Zatarain’s® Jambalaya Mix (Original)
  • 1 cup diced onion
  • 1 cup red bell pepper (chopped)
  • 1/2 cup sliced carrot
  • 2 cups broccoli (bite-size)
  • 1 cup zucchini (thinly sliced)
  • 1/4 cup sliced green onions

    Directions

    1. Bring water and tomatoes to boil in large saucepan. Add Rice Mix, onion, bell pepper and carrot; mix well. Return to boil. Reduce heat to low; cover and simmer 15 minutes
    2. Stir in broccoli and zucchini; mix well. Cover and cook 10 minutes longer or until rice and vegetables are tender. Remove from heat. Let stand 5 minutes. Sprinkle with green onions
