Description

This recipe for Vegetable Frittata takes a mere 20 minutes to prepare, so it is a quick and easy meal any time of day. Ingredients include al dente pasta, frozen mixed vegetables, egg, grated parmesan cheese, diced and fried bologna, and olive oil.

Ingredients

  • 2 cups pasta (cooked al dente)
  • vegetable (Frozen, mix, thawed)
  • 1 egg
  • 1/2 cup parmesan cheese (grated)
  • 100 grams bologna (diced and fried)
  • 1 tablespoon olive oil

Directions

  1. Combine the pasta, vegetables, egg, parmesan, and bologna. Place the olive oil into a skillet, heat, and add the pasta mixture.
  2. Cook for 4 minutes and then flip the frittata. Cook until golden brown and serve.

I actually made a large batch of these vegetable frittatas in miniature crusts and served them as appetizers for a party I hosted. I served them with homemade blue cheese and homemade ranch dressings for dipping and people raved about them.
