Ingredients

  • 2 teaspoons peanut oil
  • 3 eggs (lightly beaten)
  • 1 red pepper (seeded and finely chopped)
  • 1 bunch broccolini (trimmed and chopped)
  • 5 ounces mushrooms (sliced)
  • 1 head bok choy (trimmed and chopped)
  • 3 cups cooked brown rice
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • chili pepper
  • green onion

Directions

  1. Heat 1 tsp of the peanut oil in a wok or large skillet on high heat. Add eggs, swirling to cover bottom. Cook for 1-2 mins, until just set. Turn and cook further 1 min. Remove from wok and roll up tightly. Slice thinly.
  2. Heat remaining 1 tsp oil in wok on high heat. Stir-fry pepper and broccolini for 2 mins, until tender. Add mushrooms and bok choy. Stir- fry for 1 min.
  3. Add brown rice to wok with sweet chili sauce, hoisin sauce, soy sauce and sesame oil. Stir-fry for 1-2 mins until heated through. Serve topped with omelet, green onion and chili pepper.
