Description

These croquettes are perfect little bites to serve at a gathering. A mixture of vegetables, such as onions, leeks, zucchini, eggplant, carrots, and bell peppers make for a flavorful appetizer. The vegetables are chopped, sauteed, and mixed with some eggs and breadcrumbs to form a delicate dough. The dough is coated with breadcrumbs then fried for a crisp and hearty snack. Serve them with an herbed yogurt dipping sauce for a perfectly balanced bite.

Ingredients

US|METRIC
  • vegetable oil
  • 1 onion (peeled and minced)
  • 1 leek (minced)
  • 1/2 zucchini (diced)
  • 1/2 eggplant (diced)
  • 1 green bell pepper (seeded and diced)
  • 1 red bell pepper (seeded and diced)
  • 1 garlic clove (peeled and minced)
  • 2 carrots (peeled and diced)
  • salt
  • ground black pepper
  • 2 eggs
  • breadcrumbs

Directions

  1. Saute the onion, leek, zucchini, eggplant, bell peppers, garlic, and carrots in a couple of tablespoons of oil for about 5 minutes. Add salt and pepper to taste.
  2. Once softened, mix the vegetables with 1 egg and some breadcrumbs until a loose dough forms.
  3. Pull off sections of the dough and roll into croquette balls. Refrigerate 1 hour.
  4. Coat the croquettes in beaten egg, and then more breadcrumbs.
  5. Fry in plenty of hot oil.

Any parent who can’t get their children to eat vegetables must try this! My kids hate veggies, but the cheese and breading in this is a great disguise. They simply cannot get enough of these. They appear to be so bad, like fast-food, but they are really very healthy. Change the vegetables up from time to time and have a whole new snack food for them.
