absolutely loved it, but since I dont normally eat pasta i put my sauce on slice brussel sprouts (zoodles would be great too).

This turned out amazing. I used every ingredient listed for the sauce, although I did alter the amount of nutritional yeast. I put less than the quarter cup, simply because I’m not a big fan of the taste. Also, I steamed broccoli instead of the spinach since that’s what we had on hand. This is one of the closest recipes I’ve found that actually tastes like a real mac n’ cheese. I highly recommend giving it a try.

It’s good. Since we are vegetarians and not vegans, and since I didn’t have any yeast, I switched it with light mozzarella cheese. Maybe it should be a little bit more spicy

Pretty good. I used almond milk instead of water in the blender mixture. I sautéed another shallot with mushrooms and the spinach and then added the shells and sauce. I used this as a main dish. Next time I’ll add even more veggies so it’s not mainly pasta.

I ended up doing three things. 1) I used unsweetened almond milk instead of water. 2) I added a whole red pepper (no seeds) to the blender 3) Added a tablespoon of cumin.

so good! We ended up adding a bit of cashew milk instead of the broth just tonmake it a tad more creamy. we also sautated additional onions, mushrooms, and the spinanch on its own then added the pasta and sauce together. absolutely delicious!

i substituted curry powder over tumeric since i didnt have any, in my opinion it turned out better more like nacho cheese

It was a good recipe in theory and looked amazing.... but it just wasn't the same lol. I'm currently transitioning into becoming vegan and thought this would be a great first step but it fell flat. Maybe my taste buds need to readjust to these types of flavors but this recipe definitely didn't sit well with my current palate.
