Ingredients

  • 4 potatoes (Medium-sized)
  • 1 onion (Large)
  • 1 garlic clove
  • 1 courgette
  • 1 green pepper
  • 1 tomato
  • 1 vegetable stock (cube)
  • 1 cup frozen peas

Directions

  1. Pre-heat the oven to 200C
  2. Chop up the potatoes and boil them in water until soft (add salt to taste)
  3. Dice the onion and garlic and add to a hot frying pan with a little oil
  4. Chop up the courgette and green pepper and add to the frying pan once the onion is soft
  5. Chop up tomato into small pieces and add to frying pan
  6. Add salt and pepper
  7. Stir stock cube into a cup of boiling water, add stock to frying pan
  8. Add frozen peas to frying pan
  9. Leave frying pan contents to simmer, stirring occasionally, until stock thickens slightly
  10. Mash the potato (adding soy milk and soy butter to taste)
  11. Scoop the frying pan contents into a casserole dish, cover with the mash potato and decorate top using a fork
  12. Put in oven for 15 minutes until the top is crisp
