Description
These stuffed bell peppers filled with Creole seasoned red beans and rice are hearty, delicious and perfect for serving to dinner guests with diverse diets. The recipe is a Yummly original created by Sara Mellas.
Ingredients

4 SERVINGS
- 4 bell peppers (large)
- 2 scallions
- 1 stalk celery
- 2 cloves garlic
- 1 Tbsp. extra-virgin olive oil
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 1 1/2 tsp. paprika
- 1/2 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1/2 tsp. onion powder
- 1/8 tsp. cayenne pepper (more or less to taste)
- 1 1/2 cups cooked rice
- 1 can red kidney beans (14 oz. per can, drained and rinsed)
- nonstick cooking spray
- chopped fresh parsley (optional, for serving)

Directions
- Preheat the oven to 375°F.
- Slice the tops from the bell peppers, remove the stems, and set aside. Remove the internal seeds and membranes. Arrange the peppers open side up in a glass casserole dish.
- Finely chop the pepper tops, celery, and scallions. Mince the garlic.

Lots of time required to make it, and it is bland in flavour. Not likely to make again.

Could have used even longer baking to really cook the peppers, but other than that the flavors were there and really tasty.

It had a nice flavor to it. not to hot, not to boring. But don't be gentle on the beans, or you will feel hungry afterwards.

It turned out like the pictures, however it was a bit much rice and the taste of the celery didn’t really come through. In general not a Tex Mex flavor fan so that’s why 3 stars. But if you do like it I would recommend.

It was very tasty and the celery adds a nice crunch to it and the spices all together were phenomenal. 5 stars!

It turned out just ok. It needs more flavor and needs something to bind the contents together so you can easily eat with a fork.

Amazing!!!
I used Red bell peppers instead of yellow and 35 minutes worked perfectly. I will be using the same mixture with quorum fake meat for burritos in the future.

This was AMAZING! We stuffed both Anaheim peppers and bell peppers! So delicious! Our kids went back for seconds! We also made vegan queso and it was yummy!

I didn't care for this one so much. It lacked something in flavor that I can't quite put my finger on. It also had too much cayenne for my taste. I don't mind spicy foods when it supplements the flavor. But when the spice hits you hard and the flavor doesn't come along with it, I'm just not a big fan.

Needed something more in the mix ... like salsa? Vegan cheese ? Can’t put my finger on it

Turned out great! Only thing I would add is tamato or tomato paste to the stuffing mix if you are eating as the full meal to give it a but more body.

doubled the recipe then modified. used one of mixture half with original ingredients and added sliced portabella stuffed the peppers. remaining mixture added mex. cheese blend, stuffed a few more peppers 😋(awesomeness) still had extra mixture served with tortilla chips kids smashed it. recipe for me served 8 large peppers & 4servings of beans and rice with tortilla chips. btw omitted thyme. will make again

I feel like it was too much thyme but otherwise really good: even my kids ate it including my picky eater.
