  • 1 tablespoon olive oil
  • 1 red onion (diced)
  • 3 cloves garlic (minced)
  • 2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 tomato paste (sachet, 50g of low salt)
  • 4 cups salt (reduced stock, I use Massel vegan chicken stock)
  • 400 grams crushed tomatoes (tin no added sugar)
  • 1 medium zucchini (roughly chopped)
  • 1 cup cauliflower florets (roughly chopped)
  • 3 carrots (thick, cut into long thin rounds on the diagonal, see pic.)
  • 1 tablespoon parsley flakes (dried)
  • 2 teaspoons onion powder
  • 2 teaspoons chilli powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cup red capsicum (diced)
  • 1/2 cup red onion (diced)
  • 1/2 cup coriander (finely chopped)
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cumin
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 2 tablespoons jalapeno peppers (chopped, if you like them)
