  • 1/2 cup roasted red peppers (I used jarred peppers in water)
  • 1 teaspoon sea salt (omit for Nutritarian and add an extra 2 tbsp nutritional yeast)
  • 2 teaspoons onion powder
  • penne pasta (black bean, for Nutritarian option or any vegan pasta you prefer)
  • pico de gallo (optional: low-sodium)
